Today’s post makes me smile because it reminds me of the progress NITK has made over the years. The Simple Muesli Breakfast was actually one of the first recipes I posted on the blog. It makes me cringe a little to look at my photography way back when, but it also makes me happy to see how far the blog (and I) have come!
Even though a few years have passed and I have changed my own way of eating quite a bit, I still enjoy this Simple Muesli Breakfast often! I’ve since swapped out the plain Greek yogurt for plain coconut yogurt as I can no longer eat dairy products, but the bowl still tastes amazing!
This recipe is actually a breakfast option I give to my nutrition clients all the time to include in their meal plans. It’s easy, filling, healthy and quick – which is what everyone can benefit from in the morning! In less than 5 minutes this bowl can be thrown together, providing complex and simple carbohydrates for energy, fibre for healthy digestion, proteins for blood stabilization and fats for that satisfying factor!
Talk about B A L A N C E. This breakfast bowl is full of it!
I honestly think if I had to choose which of the three main meals is my absolute favourite, I’d choose breakfast! It’s the one meal of the day I absolutely can’t go without! It can be savoury or sweet or both and it’s always a key factor in making my day start off right!
..and when breakfast consists of creamy coconut yogurt, fresh juicy berries, crunchy almonds, and little flakes of muesli goodness how could I not love this meal the best?!
I’ve been thinking lately that I’d love to go back through some of my oldest recipes and REVAMP them like I have for today’s post as there are a few really good recipes that could use some bright, new, beautiful photos to actually do them justice, and then there’s some I’d love to just delete – but I think I’ll keep them for now just to remind me when I feel like I still have so far to go with NITK and my photos, just how far I’ve really come!

Have a fantastic Sunday!
- ½ cup plain 0% fat Greek yogurt or plain Coconut yogurt (for a diary free/vegan option)
- ½ tbsp chia seeds
- ¼ cup unsweetened muesli with a mix of nuts, dried fruits, and rolled oats
- ½ cup fresh sliced strawberries, whole raspberries, and whole blueberries
- ½ banana, sliced
- 1 tsp honey OR pure maple syrup
- Place yogurt into a bowl
- Top with sliced banana and berries
- Sprinkle with the muesli
- Drizzle lightly with honey or pure maple syrup
