Pow! That’s some bright smoothie if you ask me!
I L O V E bright colours in my food (au natural of course)! Ah, yes, as a Nutritionist there are some things that make me really, really happy; the “crisp” of an apple when taking a big bite, all the colours of the rainbow in a salad from the fresh vegetables, walking through the “deli” section of a Whole Foods every time I’m in the US, piercing a lightly cooked egg to set free the runny yolks, and blending up a smoothie that turns out so bright in colour it’s almost… almost blinding!
It’s Valentine’s Day this coming Saturday and whether you love it, hate it, or just feel indifferent, this smoothie is going to make you feel the love! It’s sweet with a little side of tart that will most definitely put a smile on your face.
The bright, bursting colour in this smoothie comes from raw beets!
Beets are super-duper healthy – they help to naturally detoxify the liver, offer an ample dose of vitamins, minerals, and antioxidants and work wonders for the digestive system! As a Ukrainian beet juice pretty much runs in my veins! Borscht is one of my favourite ways to enjoy beets (if you aren’t sure what that is just see here and here), but I do love them in salads, hidden in desserts, stacked up with other delicious foods, and now… in smoothies!
Beets are a generally sweet tasting root vegetable but in a smoothie they need a little bit sweeter of company so I combined the beets with raspberries, strawberries, and a healthy splash of almond milk!
Now.. because this is a Valentine’s inspired smoothie, how could I not add chocolate?!
Shaved 80% antioxidant rich dark chocolate with a little shredded unsweetened coconut made the perfect garnish for this vibrant red nutrient loaded drink!
Valentine’s Day doesn’t have to be a dreaded junk-food trap! Why not blend up a Sweet Beet Smoothie to serve to your sweetie(s), big and small, and share the love!
- ½ small raw beet, diced
- 1 cup frozen raspberries
- 1 cup frozen strawberries
- 2 cups unsweetened almond milk
- 1 tablespoon raw honey (or 10 drops liquid stevia, or 1 tablespoon agave nectar, or omit for a less sweet smoothie)
- 2 tablespoons shaved good-quality dark chocolate
- 2 tablespoons unsweetened shredded coconut
- Blend the beet, berries, almond milk, and optional sweetener until smooth. Divide into two glasses and garnish with the chocolate and coconut. Drink up!
