Justin and I had the best time EVER in Radium celebrating our anniversary! Camping is really one of my favorite things to do. I love everything about it; being outside, staying in a tent/trailer/or other little homey thing that isn’t an actual house, sitting around a campfire, and wrapping up in a cozy sleeping bag at night. One thing however, that I do not believe has to be sacrificed when camping is good nutrition!
What do you think of when “camping food” comes to mind? Usually people will say “hot dogs, chips, burgers, potato salad, s’mores” etc. Well most of these choices, unfortunately, are not the healthiest (although I will admit, I do indulge in a s’more or two when I camp!). So I want to show you in this post that it IS possible to eat healthy while camping!
The first night in Radium we decided to BBQ. Justin brought our handy dandy little mini grill. We fired it up and made a wonderful dinner of grilled prawns (for me), steak (for Justin… although I do eat meat I am not a big beef eater, and I consider myself a flexitarian), grilled corn-on-the-cob, and a garden salad!
The garden salad was whipped up in a jiffy! I used mixed greens lettuce, sliced cucumber, halved cherry tomatoes, sliced yellow bell pepper, 1 slice of partly skimmed mozzarella torn into pieces, and 1 tbsp of Bolthouse Ranch Dressing. Although I usually prefer to make homemade dressing, this one works in a pinch and I really like the Bolthouse brand!
The prawns were seasoned with salt and pepper, and were very quick to grill! I really like prawns as they are low in fat and calories yet still pack a good amount of protein! The corn was put on the grill, husk on, and rotated a few times. When the corn is done you can just pull the husk back and enjoy! I didn’t even put butter on the corn as to me it has so much flavor already, I didn’t need feel the need for butter! On the side I added a dollop of Summer Fresh Cucumber and Garlic Greek Yogurt Dip to dip the prawns in! Delicious 🙂
The next day we had a golf game scheduled at the Radium Resort golf course so I had my typical Muesli Breakfast and a Peanut Butter & Honey Muffin to give me energy for the big game! 🙂 The muesli breakfast is SO easy to take to go – It was even more delicious than normal because the berries had already begun defrosting and were making their own little syrup in the Tupperware. It was delicious and exactly what I needed to get me started for the day!
The next day we decided to do a nice hike up to this secret waterfall that Justin had gone to when he was in Radium as a kid, so we needed some real energy to get us going! We made Skillet Eggs & Spinach! This recipe is so easy and wonderful to make while camping. All you need is a heavy cast iron skillet and a fire or a mini BBQ. Eggs are a great source of energy, and adding a bunch of veggies makes this breakfast very nutritious!
- 4 large organic eggs
- 3 white mushrooms, sliced
- 1 cup fresh spinach
- 6 cherry tomatoes, halved
- ¼ cup white onion, diced
- salt & pepper
- 2 tablespoons water
- 1 slice part skim mozzarella
- Heat the skillet on the fire or BBQ till warm (not too hot).
- Add the water, onion, and spinach. Stir frequently as skillet heats up until spinach is nicely wilted.
- Add mushrooms and tomatoes and cook until softened.
- Break each egg gently into the skillet, try not to puncture the yolks, equal distance apart.
- Cover the skillet and allow the eggs to cook and vegetables to continue to steam.
- Once eggs are cooked to your liking (I like my yolks still slightly runny), top each egg with a little mozzarella. Recover and allow mozzarella to just melt.
- Carefully scoop each egg/veggies out with a spatula, serve with a piece of whole grain toast, or just by itself, and enjoy!
The skillet breakfast was filling without leaving me feeling that “heavy full”, we all know that feeling and it’s no fun! I liked it so much I’m thinking I might make it again at home in just a pan on the stove! The hike was wonderful and I wasn’t feeling hungry at all, just perfect! Just take a look at this beauty we got to experience! I even did a little yoga on the hike (or attempted to!)
The weekend was wonderful, full of fun activities, beautiful weather, breathtaking scenery, delicious food, and lazing around! I can’t think of a better way my hubby and I could have spent our first anniversary!
