Carrot & Sweet Potato Fries
- 3 large carrots, peeled and cut into ½ inch strips
- 1 large sweet potato, unpeeled and cut into ½ inch strips
- 1 tablespoon olive oil
- 1 tablespoon dried dill weed (optional)
- salt and pepper (to taste)
- Preheat oven to 400 degrees.
- Cut sweet potato and carrots into strips.
- Place on a baking sheet, drizzle with olive oil and toss lightly to coat.
- Season as desired, and bake for up to 40 minutes or until desired crispiness.
- Check fries intermittently and flip to cook evenly.
- Enjoy!
Use whichever seasonings you feel like to enhance the flavor and make them your own - lemon/pepper, cajun, dried herbs, etc.
