GF Apple & Sunbutter Granola Muffins

Serves: 6
Ingredients
  • 1 cup rolled oats (GF if needed)
  • ½ cup shredded apple (or one small gala apple)
  • 2 tablespoons sunflower butter (you can use peanut or almond too!)
  • ¼ cup raw honey
  • ¼ tsp cinnamon
  • ¼ tsp pure vanilla extract
  • (optional: 1 whole egg or 1 tablespoon flax mixed with 3 tablespoons water to make a "flax egg" - I did not use this so the muffins were a tiny bit crumbly, so this would work well as a binder but is not totally necessary)
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a bowl and mix well.
  3. Transfer the mixture to a well greased 6-muffin tin (mini muffins), and press down firmly with the back of a spoon.
  4. Bake for 20 minutes or until the edges start to brown slightly. Allow to cool completely before taking out of the muffin tin.
  5. Enjoy!
