It’s no fail that at least once every Summer, I eat my weight in fresh cherries. It’s just bound to happen…when these delicious, juicy, sweet, little red fruits come in season, there ain’t no stopping me. 

So now that I’m officially on a cherry kick, I obviously had to whip up something for the blog using cherries in a clever, but still totally doable way.

Because Summer is in full swing and Pinterest has become a heaven of frozen desserts recipes, I decided I’d add a tasty and super simple frozen treat to the mix. Of course it’s the easiest to pop by the nearest grocery store and grab an already made frozen dessert, but it’s still easy and a whole lot more fun, to use simple ingredients to make your own!

It’s been a while since I’ve made a popsicle recipe for the blog and I’ve been brainstorming a few ideas since May, so when So Delicious asked me to get creative with their new Cashewmilk Frozen Desserts I knew that a popsicle LOADED with fresh cherries was where I’d be headed.

Since developing a dairy sensitivity a few years ago I’ve had to say good-bye to a lot of frozen dessert options that contain cream, milk, yogurt etc. Not that I ate these often before, because I’d obviously end up feeling really sick after, it was still nice to treat myself once in a while.

Luckily for me, NOW there’s many brands, including So Delicious, that make amazing options that not only taste ‘So Delicious’ (don’t mind the pun!) but also contain ingredients that don’t make me cringe. This new Cashewmilk Frozen Dessert line contains all Non-GMO, certified vegan, soy free and gluten free ingredients. Sans any artificial colours, flavours, or sweeteners too. That’s speaking my language.

I decided for my popsicles, I’d stick with a simple, creamy, base, using the Creamy Cashew Cashewmilk Frozen Dessert, add in a ton of fresh cherries, then drizzle, drizzle, and drizzle some more with dark chocolate, and finish a sprinkle of crunchy cashew bits.

The result was beyond my expectations. I mean…cashew, chocolate, and cherry altogether in a perfect little frozen package? What’s not to love!?

Creamy Cashew Cherry & Chocolate Popsicles // Vegan & GF

Serves: 5-6
Ingredients
  • 1 container So Delicious Creamy Cashew Cashewmilk Frozen Dessert or Vanilla Ice Cream (vegan) of choice
  • ⅓ cup unsweetened non-dairy milk of choice (almond, cashew, etc.)
  • 1 cup fresh cherries
  • ¼ cup 70% dark chocolate chips or squares
  • 2 teaspoons coconut oil
  • 2 tablespoons raw or roasted cashews, crushed into bits
Instructions
  1. Blend the cashewmilk frozen dessert with the non-dairy milk in a food processor until smooth. This makes a good consistency to add to the popsicle molds.
  2. Take the cherries, remove the stems, then squish one cherry at a time between your fingers and thumb to remove the pit. Add all the pitted cherries to a bowl.
  3. Using a potato masher or similar, mash the cherries slightly to break into smaller pieces.
  4. Take your popsicle mold (you should be able to fill 4-6 individual molds in the tray) and layer the cherry pieces with the frozen creamy cashewmilk mixture.
  5. Insert a popsicle stick in each filled mold.
  6. Place the filled molds in the freezer for at least 5 hours.
  7. When the popsicles are completely frozen you can prepare the chocolate drizzle.
  8. Prepare the chocolate drizzle by melting the chocolate chips with the coconut oil in a pan over low heat, then remove from the heat and set aside for about 20 minutes to cool.
  9. Once the chocolate sauce is somewhat cooled, remove the popsicles from the freezer and let thaw slightly so you are able to easily remove the popsicles from the mold.
  10. Remove the popsicles from the mold and set them on a plate.
  11. Drizzle the melted chocolate over each popsicle, (working quickly so they don't melt!) then sprinkle with cashew bits.
  12. The chocolate will harden right away so the popsicles can be enjoyed immediately, or place the plate with the drizzles popsicles back in the freezer until you are ready to serve.

    my question is, for those without a dairy intolerance, are these frozen desserts still healthier than normal ice cream? sometimes I get caught up in labels, like vegan and gluten-free, even though these desserts can technically end up containing more sodium, fat, and refined sugars than a normal treat. but since cashew milk and almond milk have better nutrition, for me, than dairy milk, I was wondering about these So Delicious ones.

    • Hey Alexa!! Honestly, when I look at the ingredients for the dairy alternatives like So Delicious and Coconut Bliss, I’m always impressed with how they keep things pretty whole-food. If you can find an ice cream made with organic cream and natural sweetener and you can handle dairy, then that would be a fine option too!
