Yes. If they serve breakfast in Heaven, I can almost guarantee these pancakes are on the menu.
I came across this recipe on pinterest, from a wonderful blog; Minimalist Baker, and thought to myself, “Are those really healthy?? They can’t be!” so I went in for a deeper look…
I inspected each and every ingredient, and yes, why yes, they ARE healthy!
It was my Hubby’s Birthday on Monday, and in leu of Remembrance Day, we both had the day off work! I was already planning on making him a fantastic breakfast, but more along the lines of something with eggs. Then while lying in bed, looking at pinterest on my phone (pretty much a morning ritual), I knew I had the ultimate Birthday breakfast for him!
Also, lucky enough for me, I had everything I needed in my pantry and fridge!
Rolled oats, check. Whole wheat flour, check. Baking powder, check. Vanilla extract, almond butter, and coconut oil, check-check-check! A ripe banana, dark chocolate chips, ground flaxseed, yessss! Most of these ingredients are super common and always on hand, in my kitchen anyway, so it was great to know I didn’t have to run out to pick up a bunch of ingredients!
These pancakes are sweetened purely with a banana and a small amount of dark chocolate chips (the recipe calls for semisweet chips but I used dark chocolate because it has a higher cocoa content and less sugar than semi-sweet). There are no refined flours, and the rolled oats make up the bulk of the pancakes. Oats are a fantastic source of soluble fiber and a great complex carbohydrate for long lasting energy!
These pancakes came together in less than 15 minutes, which was fantastic because I had the time it took the Hubby to shovel the walks to make them!
When the Hubby had finished shoveling (I know, what a mean wife making him shovel snow on his birthday!!) he came inside to a warm, syrupy, pile of these delicious pancakes. A very happy boy indeed.
It didn’t take long until these scrumptious little pancakes were devoured and resting in the Birthday Boy’s belly!
