How is it Wednesday already?! Geez, these summer days are just-a-flyin’ by!

We’ve been busy, busy, busy with things so far this summer and I’ve also been trying to keep my eating on track as we are heading down to Seattle for a vacation in August, and well, I want to be in good bikini condition, lol! So, I have been putting in extra effort to prepare and plan my meals ahead of time!

For me, when I have meals or even components of meals like proteins, carbs, and veggies prepped ahead of time, I have a WAY easier time staying on track and keeping away from mindless snacking! So, batch cooking is totally where it’s at!

I was trying to find a new way to make a big batch of slow cooker chicken and happened upon this recipe from Bravo For Paleo.

When I saw the recipe I thought “that’s it?!” … seriously… 2 ingredients?!

… and it is flavourful?!

I HAD to give it a go!

Off to the store I went to find some clean salsa verde – and I say “clean” because lots of prepared salsas have lotsa poop ingredients in them these days – .. glucose/fructose… etc. This one – Herdez brand, had green tomatoes, Serrano peppers, onion, salt, and coriander – that’s it! Perfect!

Into the slow cooker went a batch of chicken breasts, and 1/2 cup of this lovely salsa…


A few hours later.. BOOM!

Deeeelicious, and I mean DEEEELICIOUS slow cooker chicken!

Honestly, I was shocked at the intense flavour, and it was SO easy it’s almost embarrassing!

The hubby and I gobbled this up for dinner, and lunch the next day, AND the next day!

And, because I had lunches planned for the following couple days from this incredibly easy recipe, I stayed on track!

I’ve heard about a cheeseburger that uses a donut for a bun… I’m thinking I might need to pack my own food if that’s the kind of grub they have there?! Eiiish!

  • This sounds great. I’m looking for some nutritious make ahead meals for our holiday – this sounds like a winner!

  • Love crock pot recipes! This is the only way I eat chicken, though I had never though to cook it with salsa! I usually just use chicken broth and sometimes a can of diced tomatoes, but this would add way more flavor.

    It sounds like you’ve had a pretty productive time recently, that’s good! 🙂 My silvers are running short, so Imma gawna have to maybe do some batch cooking myself for the two next weeks before pay day. This looks like a lovely recipe, it’s great when you don’t need so many ingredients at hand!

    Over here, I can hardly find salsa verde anywhere! Luckily though, there’s this little Mexican shop on one of the main roads called Lupe Pintos that can provide – sorted! WIshing you all the best for the rest of the week 😀 x
