Carrot Cake Vegan Overnight Oats

I recently posted a delicious carrot cake recipe roundup that is turning out to be pretty popular so I thought I’d revamp this rather old recipe for carrot cake vegan overnight oats. It’s been a lot of fun digging through my old recipes and bringing them back to life on the blog (there’s so much that gets lost in the “archives” over the years), and there’s a lot of recipes on NITK that deserve new photos including this one.

This overnight oats recipe embodies the flavours of carrot cake but without the flour, sugar, cream cheese. Instead the spices, shredded carrots, pineapple chunks, raisins, coconut yogurt, and shredded coconut come together with gluten free rolled oats, flaxseed, and pure maple syrup along with yummy toppings and a creamy tahini maple drizzle that makes these simple overnight oats recipe so delicious and carrot-cake-esque.

I got a little creative with this recipe revamp and used a ton of fun and delicious healthy toppings to amp up the carrot cake vegan overnight oats. Raisins, pistachios, walnuts, sunflower seeds, and a super simple tahini maple drizzle make the ultimate toppings but if you like to keep it really simple, the oats all by themselves are great too!

Why Overnight Oats?

 

“Overnight oats” is such a great concept. It’s really all about convenience, especially for those who don’t like mornings or just never leave enough time for a good healthy breakfast. You simply make the oats the night before, pop them in the fridge to let the oats soak up all the liquid overnight, and in the morning you have the consistency of cooked oats, ready to enjoy…without the cooking!

I’ve made several overnight oats recipes on the blog and I just love how versatile this dish really is. You can add so many different ingredients to simple overnight oats (which usually consist of rolled oats, yogurt of choice, milk of choice, chia seed or flaxseed, and a sweetener of choice) then you add in whatever your heart desires: fruits, protein powder, nuts, seeds, dried fruits, shredded veggies like carrot or zucchini. The sky’s the limit!

There’s a ton of ingredients you can combine in simple overnight oats to make them unique and delicious just like carrot cake overnight oats.

I was really happy with how this version of overnight oats turned out after the revamp as I made a few little tweaks. I wasn’t sure it would be sweet enough especially considering the “carrot cake” name, but with the perfect amount of maple syrup and natural sweetness from the raisins and pineapple, it turned out wonderfully. The flaxseed combined with the oats, almond milk and yogurt also give the oats a nice rich and creamy texture.

While I am totally into a little sweetness for breakfast, for those of you who like more savoury meals in the morning, don’t write this recipe off just yet. The aromatic spices and the carrots still lend a savoury flavour to the mix so you might just love this overnight oats recipes as much as I do!

While I didn’t add protein powder to my overnight oats this time around (I usually do) it’s definitely an option as I know a simple vanilla protein powder would blend in just fine. Even without protein powder this breakfast contains a nice balance of healthy fats, protein, complex carbohydrates, and a nice amount of dietary fibre – about 10g per serving! 

These carrot cake vegan overnight oats will definitely fill you up without leaving you feeling sluggish and give you lasting energy throughout the morning.

Carrot Cake Vegan Overnight Oats
 
Serves: 2
Ingredients
  • Carrot Cake Overnight Oats:
  • 1 cup rolled oats
  • 2 tablespoons ground flax
  • ½ tsp cinnamon
  • ⅛ tsp nutmeg
  • 1 tablespoon maple syrup
  • ½ cup shredded carrot
  • ¼ cup finely diced pineapple
  • 1 tablespoon unsweetened shredded coconut
  • 1 tablespoon raisins
  • 1 tablespoon chopped raw walnuts
  • ¼ cup unsweetened coconut yogurt (I love the Yoso brand)
  • ¼ tsp vanilla
  • 1 cup unsweetened vanilla or plain almond milk
  • Optional Toppings:
  • Raw chopped walnuts
  • Raisins
  • Pistachios
  • Sunflower Seeds
  • Shredded Coconut
  • Tahini Maple Drizzle
  • Tahini Maple Drizzle:
  • Stir together 1 tablespoon runny tahini with 1 tablespoon maple syrup and 1-2 tablespoons water and drizzle over the overnight oats (serves 2).
Instructions
  1. In a bowl combine all of the ingredients and mix well.
  2. Divide between two mason jars or Tupperware containers.
  3. Cover and place in the refrigerator overnight.
  4. In the morning, stir the overnight oats and add whatever toppings you prefer.
  5. Heat in the microwave or on the stovetop or enjoy cold (I prefer my overnight oats cold!)
  6. Enjoy!
