Apple Pie Oatmeal


This is such an easy and delicious recipe. I’m putting it under the breakfast category but I think this could be easily enjoyed as a snack or lunch too, especially on a cold Fall day.Β The great thing about this recipe is there is no added sugar and it really doesn’t need it! The natural sugars in the apple and apple juice are perfect and add a sweetness along with a great tart flavor. The steel cut oats are filling, full of fiber, and a great source of long lasting energy to get you going in the morning. The cinnamon makes the oatmeal smell wonderful and adds that little bit of spice, and the diced apples add great texture and of course more wonderful nutrients!

I made this recipe in my slow cooker while I was making dinner the other night and the smell was mouthwatering! When the oatmeal was finished I divided it into 1 cup portions and popped it in the fridge (after having a small little bowl, to make sure it tasted right of course) then enjoyed it as a warm and filling breakfast the next morning!

Oh! Just a little update as well – The hubby and I are officially embarking on our Europe trip tonight! Eeeeek!

This means, for the blog, that posts over the next 3 weeks or so will be a little fewer as I don’t really feel like having my face glued to a computer while I’m away! However, I do think it is a great opportunity to post about the places we go, and the food there, and I will be adding a special healthy recipe for each place we visit! So stay tuned!

Slow Cooker Apple Pie Oatmeal

Serves: 5
Ingredients
  • 1 cup steel cut oats
  • 1 cup unsweetened apple juice
  • 2 cups unsweetened almond milk
  • 1 cup water
  • 3 apples, diced
  • ½ tsp ground cinnamon
  • 2 tablespoons pure maple syrup (optional)
Instructions
  1. Place oats, apple juice, almond milk, diced apples, cinnamon, and maple syrup in the slow cooker.
  2. Set at high and cook for 2½ hours or set at low and cook for up to 8 hours.
  3. Once finished, serve with a sprinkle of cinnamon and drizzle of pure maple syrup.
  4. Enjoy!

  • I loved the convenience of this! It lasted most of a week in the fridge, but was a bit much for one person to eat off of. I will probably try freezing some of it next time like you mention trying.

    • You could keep the rolled oats whole, the only thing it the whole mixture may be more liquidy than with steel cut oats! I would just use more oats!

  • Wow! I am a huge fan of apple pie, able to demolish a single pie myself, so a healthier option is a godsend! I’ve made two pots of this already and shared it with everyone I know!     • Sure! But the consistency may be a little different as the steel cut oats are quite a bit heartier, I would use a little less of the liquids when using old fashioned oats!

      To make this stovetop you would put the oats, water, apple juice, diced apples and cinnamon in a pot and leave at least 2 or 3 inches of room at the top (so the oats don’t boil over). Bring it to a boil over medium high-heat. Turn heat down to low, then simmer the oats for 20 minutes, stirring every few minutes.

      The apples might not be as soft as in the slow cooker version but it should still taste delicious!

  • I am SUPER excited to try this! I love steel cut oats but hate cooking them. I never thought about the slow cooker!! I wonder if it would also work in my rice cooker.
