Every time I hear the word, I think of Mr. Monster… the Cookie Monster that is, and his token “mmmmm… coooooookies” grunt. I mean, can we blame him? Cookies are so friggin’ yummy!

Unfortunately not all cookies are created equal, and many of them, particularly the commercially prepared ones, are chock-full of refined sugars, flours, hydrogenated oils, and those weird unpronouneable ingredients like tert-butylhydroquin…ooo…what?! (Seriously, TBHQ is a common additive found in many store-bought cookies!)

Luckily, there’s cookies like THESE grain-free nut butter chocolate chip cookies that my lovely gal pal Brooke, from Brilliant by Brooke came up with for her upcoming recipe e-book that provides healthy, guilt-free treat options for her clients!

Brooke and I got together the other day to hang out, and so that I could photograph some of her awesome recipes. One of those recipes was for these nut-butter cookies! They were so darn delicious and simple I told her that I absolutely HAD to share them with all of my lovely NITK readers!

Made with just 5 whole-food ingredients, the nut butter cookies came together with a snap of the fingers!

All it took was a simple mix in a big bowl, batter dolloped and pressed onto a parchment lined cookie sheet, a quick little bake in the oven, and voila! a house full of freshly-baked-cookies smell!

These nut butter cookies are full of healthy essential fatty acids, vitamins, minerals, fibre, protein, natural sweetness, and they left us both feeling satisfied and content after enjoying just two cookies each!

See, that’s the thing about cookies or other desserts that use whole-food ingredients as opposed to refined flours and sugars, they actually create the feeling of satiety, so less truly is more!

Grain Free Peanut Butter Chocolate Chip Cookies

These delicious cookies came in at right around 100 calories each and surprisingly so because they really are rich, dense, and satisfying!

Seeing as it’s back-to-school this week, Brooke and I both agreed that these healthy and easy cookies would make a great after-school snack for both the kiddies AND mom or dad.. without ruining dinner!

{100 Calorie} Grain-Free Nut Butter Chocolate Chip Cookies

Ingredients
  • 1 cup natural nut butter (cashew, almond, peanut, or a mix of all three!)
  • 3 tablespoons pure maple syrup
  • ½ tsp baking powder
  • 1 egg
  • ½ cup dairy free dark chocolate chips
Instructions
  1. Preheat the oven to 350 degrees and line a cookie sheet with parchment paper.
  2. In a bowl mix together all ingredients until well combined.
  3. Scoop about a tablespoon amount of batter and roll into a ball, place on the cookie sheet and press with a fork.
  4. Repeat until all the batter is used. Makes about 18 cookies.
  5. Bake for 10-12 minutes.
  6. Let cool completely, then enjoy!
